This week, I decided to do something a little different and make a post about one of my favorite things in the world: food! I have been contemplating posting recipes for a while and, after making one of my favorites last night, I thought that there couldn’t be a better time to share my first foodie favorite. Or more precisely, a recipe that I like to call Cheesy Chicken and Rice!
Now, I’m no chef, but I do find it fun to get creative with cooking every once in a while. That is exactly what happened the first time I made this dish. At the time, I was too lazy to go to the store. So, I just decided to throw something together with ingredients that I already had in my kitchen. The finished product came out as a close cousin to Chicken Caprese. However, I find that this dish also reminds me of my childhood favorite Chicken and Rice. Since then, Cheesy Chicken and Rice has become a go-to dish in my cooking repertoire. I hope that you guys enjoy it as much as I have!

Total Time: 30 Mins
Serves: 2
What You’ll Need:
- 2 boneless skinless chicken breasts
- 2 tablespoons of olive oil
- 1/8 teaspoon garlic powder
- 1/8 teaspoon dried oregano
- 1/8 teaspoon dried basil
- 1 sliced tomato
- 2 slices of mozzarella
- 2 tablespoons of soy sauce
- 2 bags of instant rice
Instructions:
- Heat stove over medium to high heat.
- Pour olive oil into a pan and place on stove.
- Place chicken breasts into a pan and cook for 5-7 minutes per side.
- When chicken is done, top each breast with a slice of mozzarella and 1-2 slices of tomato (depending on size).
- Serve on a bed of rice and finish by drizzling soy sauce over the top of the entire dish.
